Both my husband and I feel like we need to detox from all of the Thanksgiving food!! My sister-in-law left us a huge portion of leftover cheesecake... and oh my goodness, I feel so yucky from eating all that cheesecake! I am going to post some pictures soon from our Thanksgiving... I was pretty happy with how everything turned out!
This weeks meals are going to be pretty simple and healthy.
Monday:
Tuesday: Green Bean Green Curry Stir Fry over Brown Rice
Wednesday: Veggie & Feta Stuffed Calzones made w/ Whole Wheat Crust
Thursday: Honey Baked Lentils (I add some carrots or sweet potatoes) Whole Wheat Toast & Spinach Citrus Salad
Friday: Date night!
Weekend/Other: Leftovers, Split Pea Soup, Mushroom Quesadillas
Snacks: Breakfast Bars
Mmmm... now I'm hungry. I'm gonna go grab some lunch. Maybe an almond butter & jelly sandwich.

Looks like a great eating week. That lentil recipe looks fabulous. Have you made it before? I'm going to add it to my "to try" list.
Yes, I make it all the time... it is my fall back frugal, easy, yummy recipe. Red lentils will cook much quicker than brown or green, but will also be softer. French green lentils take FOREVER and seem to never get soft, at least that is my experience. I generally like this recipe cooked longer or some of it pureed so that it isn't so "watery". You should defiantly try it!
